Healthy Eats: Vegan Salted Caramel Ice Cream

In the process of deepening your practice, you find that there are endless ways to live your yoga everyday. The art of yoga can be found in so many unique places other than barefoot on your mat-- one of them being in the kitchen. Enriching your practice starts with your mind, connects with your soul and ends with your body. With that said, we love discovering yummy recipes to fuel a healthy and happy lifestyle.

Although ice cream may not be the healthiest, it sure is the yummiest. With the weather heating up, we're looking for ways to cool down. And if diary-free ice cream is wrong, we don't want to be right. Join us for a sweet treat via


Caramel Sauce (Makes: 1 1/2 cups)

2 1/4 cups Silk® Unsweetened Cashewmilk
1 1/8 cups brown sugar
1/2 cup granulated sugar
2 1/2 tablespoons brown rice syrup
1/4 teaspoon lemon juice (generous)
1-2 teaspoons flaky sea salt, to taste

Ice Cream

2 cups raw cashews, soaked in cold water overnight (minimum 6-8 hours)
2 1/3 cups cold Silk® Unsweetened Cashewmilk (look for it next to refrigerated dairy milk)
1/3 cup coconut oil, melted and cooled
1 cup caramel sauce + more for topping
Flaky sea salt for finishing
