Healthy Eats: Chia Seed Pudding

Healthy Eats: Chia Seed Pudding

Chia seeds. Unless you've used them before, you may be scratching your head right now. Yes, we're talking about the same seeds used in the classic Chia Pet® but, who knew they're absolutely delicious? They're the new must-have superfood and with so many health benefits, they're here to stay! Here are some of the benefits we can't get enough of:

• Rich in Omega-3 Fatty Acids
• High in fiber; Two tablespoons has 1/3 of your recommended daily fiber intake.
• Gluten-free.
• Keeps you feeling full for a long amount of time thanks to fiber and protein.

With only four ingredients, this recipe will by far, be the easiest thing you'll ever make. The pudding makes a good base for any flavor profile you want. Feel free to have this as a healthy, yummy breakfast or sprinkle some chopped nuts and chocolate on top for an incredibly easy, sinfully delicious dessert. The possibilites are endless!

Ingredients

  • Serving size: 2/3 cups. 
  • Makes 4 servings.
  • 2 cups of coconut milk
  • 1/3 cup of chia seeds
  • 1 tablespoon plus 1 teaspoon of honey
  • 1 teaspoon of vanilla extract

Directions
Mix all four ingredients in a large bowl. Cover with plastic wrap and refrigerate for at least one hour before serving.

Possible Toppings

  • Granola and berries
  • Pinch of salt and a drizzle of caramel sauce
  • Chopped nuts with chocolate shavings
  • Layer pudding with banana slices and crumble vanilla cookies on top
