Everyone's favorite little protein-packed grain just got a little bit better. How? Just add chocolate. These April showers have flooded our taste buds with Veggie Quinoa Chocolate Chili. 1/2 cup quinoa, rinsed
1 cup water
1 small onion, chopped
1/2 butternut squash, chopped into 1/2-inch chunks (about 3 cups)
2 bell peppers, you pick the colors
1 large zucchini, chopped
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red kidney beans, drained and rinsed
3 (15 ounce) cans diced tomatoes
1 (15 ounce) can tomato sauce
3-4 cloves garlic, minced
1 jalapeno pepper, diced
2-3 tablespoons chili powder, to taste
1-2 tablespoons unsweetened cocoa powder or 3-4 small squares unsweetened bakers chocolate, to taste
1 1/2 tablespoons ground cumin
1 tablespoon olive oil
Salt and black pepper, to taste
Topping ideas: avocado slices, cheese, Greek yogurt (instead of sour cream) and tortilla chips
