Healthy Eats: Veggie Quinoa Chocolate Chili

Enriching your practice starts with your mind, connects with your soul and ends with your body. With that said, we love discovering yummy recipes to fuel a healthy and happy lifestyle.

Everyone's favorite little protein-packed grain just got a little bit better. How? Just add chocolate. These April showers have flooded our taste buds with Veggie Quinoa Chocolate Chili. If you think adding chocolate to chili is April foolery, you have to try this recipe from for yourself! 


1/2 cup quinoa, rinsed
1 cup water
1 small onion, chopped
1/2 butternut squash, chopped into 1/2-inch chunks (about 3 cups)
2 bell peppers, you pick the colors
1 large zucchini, chopped
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red kidney beans, drained and rinsed
3 (15 ounce) cans diced tomatoes
1 (15 ounce) can tomato sauce
3-4 cloves garlic, minced
1 jalapeno pepper, diced
2-3 tablespoons chili powder, to taste
1-2 tablespoons unsweetened cocoa powder or 3-4 small squares unsweetened bakers chocolate, to taste
1 1/2 tablespoons ground cumin
1 tablespoon olive oil
Salt and black pepper, to taste
Topping ideas: avocado slices, cheese, Greek yogurt (instead of sour cream) and tortilla chips
