Healthy Eats: Veggie Quinoa Chocolate Chili

Ingredients

  • 1/2 cup quinoa, rinsed
  • 1 cup water
  • 1 small onion, chopped
  • 1/2 butternut squash, chopped into 1/2-inch chunks (about 3 cups)
  • 2 bell peppers, you pick the colors
  • 1 large zucchini, chopped
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 3 (15 ounce) cans diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 3-4 cloves garlic, minced
  • 1 jalapeno pepper, diced
  • 2-3 tablespoons chili powder, to taste
  • 1-2 tablespoons unsweetened cocoa powder or 3-4 small squares unsweetened bakers chocolate, to taste
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Topping ideas: avocado slices, cheese, Greek yogurt (instead of sour cream) and tortilla chips
